Forget any avocado soup you may have previously tasted. This is the real deal. It’s perfect for lunch or a quick dinner, and even as an elegant dinner party appetizer with a glass of wine. With cold days still ahead of us, it’s a great time to try this beautiful treat. A mix of avocados, cumin and fresh baby spinach give this soup a fantastic flavour. Avocados are already creamy on their own so you don’t need any additional cream.
Here we go. Heat some olive oil in a medium pot. Add the onion and cook for about three minutes. Add the garlic, cayenne pepper and cumin. Cook for one more minute, stirring constantly. In with the veggie broth, lime juice, avocados salt and pepper. Bring to a boil. Reduce the heat and cook for about seven minutes. Transfer to a blender. Add a few handfuls of baby spinach and fresh rosemary. Blend until smooth. Yeah, it’s that simple.
